Homemade Granola Bars

 

I found this wonderfully delicious and extremely easy recipe online in a food allergy support group forum (whew- that was a mouthful!) It contains no nuts, no gluten, no dairy. But fear not, friends! It is GOOD. It turns out, it is a Martha Stewart recipe and requires no baking- hurray.

Think: Rice Crispy Treats without the butter and marshmallows.

You'll need:

  • 8x8" baking dish
  • Non-stick cooking spray
  • 1 3/4 cups of quick cooking oats
  • 1 3/4 cups of crispy rice cereal
  • 1/2 cup mini chocolate chips (I used big fat ones-yum)
  • 1/3 cup brown sugar
  • 1/3 cup honey
  • 1/3 vegetable oil
 

Take your pan and spritz it with the cooking spray, then set aside. Take a big bowl and add oats and rice cereal, and mix it together. On the stove, on medium-high heat mix brown sugar, honey, and oil. Allow it to come to a gentle boil, stirring all the while so it does not burn. Once it is fully melted and combined, add it to the oats and rice, and stir until it is entirely covered. Then put it into the baking dish. Once it is cool enough to handle, add chocolate chips to the top and press it down into the pan so it is firm and won't crumple when you attempt to cut and remove it.

Note: You could easily add dried cranberries, raisins, or whatever else your heart desires into it instead of or with the chocolate chips.

We took these on a playdate with Nick's twin buddies and they were gobbled up in a hurry by both mommies and their boys.
